Assemble the rolls: Lay a sheet of nori on a bamboo sushi mat (shiny side down). Spread a thin, even layer of the seasoned rice over the nori, leaving about 2 cm (1 inch) of space at the top edge. Arrange cucumber and avocado strips along the center of the rice. Using the mat for guidance, roll the sushi away from you, pressing gently to form a tight roll.
