Instructions
Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
Heat 1 tablespoon of olive oil in a skillet over medium heat. Sauté the onions for 3-4 minutes until translucent, then add garlic and mushrooms. Sauté until the mushrooms reduce and moisture evaporates, about 7-8 minutes.
In a large bowl, mash the black beans with a fork until mostly smooth but still a bit chunky.
Add cooked quinoa, sautéed vegetables, tomato paste, smoked paprika, salt, black pepper, and pulsed oats to the black beans. Mix until you have a cohesive dough.
Divide the mixture into 4 equal portions and form into patties about 3/4-inch thick.
Place the patties on the prepared baking sheet and brush tops lightly with remaining olive oil. Bake for 12 minutes, flip, and bake another 10–13 minutes until golden and firm to touch.
To serve, toast the buns and spread the vegan mayo or aioli on one half. Place the veggie patty, avocado slices, and fresh greens inside the bun. Close gently and serve warm.
Notes
Chill the burger dough for 15–20 minutes before shaping for easier handling.
You can substitute oats with panko breadcrumbs or almond meal for a different texture.
To make it gluten-free, ensure your oats and buns are certified gluten-free.
Pan-searing the patties in a lightly oiled skillet before baking adds extra crispiness, though optional.
