Heat the olive oil in a large skillet over medium heat (about 350°F / 175°C). Sauté the diced red onion for 3-4 minutes until soft and slightly golden, then add the minced garlic and cook for another 30 seconds until fragrant.
Add the black beans to the pan along with cumin, smoked paprika, and sea salt. Mash the beans slightly with the back of a spoon for a chunky consistency. Stir and cook for 2-3 minutes, then remove from heat and mix in lime juice. Set aside.
Warm a clean, dry skillet over medium heat. Place one tortilla on the skillet and sprinkle half with a spoonful of the black bean mixture, avocado slices or mash, and a bit of vegan cheese if using. Fold the tortilla in half gently.
Cook each quesadilla for about 2-3 minutes per side or until golden brown and crispy. Press gently with a spatula to ensure even browning and melting. Repeat with remaining tortillas.
Transfer quesadillas to a cutting board. Let rest for 1 minute to allow filling to set slightly, then slice into wedges. Garnish with fresh cilantro.
