Instructions
Heat 2 tablespoons of sesame oil in a wok or large skillet over medium-high heat (375°F / 190°C). The oil should shimmer slightly—do not allow it to smoke.
Add the sliced garlic and julienned ginger to the hot oil. Stir frequently and cook for 1–2 minutes until fragrant and golden—but not browned, which can make garlic taste bitter.
Toss in the shredded cabbage. Stir constantly for about 5–7 minutes, or until the cabbage begins to wilt and slightly char at the edges for added flavor. The goal is to retain a tender-crisp texture.
Add soy sauce, rice vinegar, maple syrup, and black pepper to the pan. Continue to stir-fry for another 2–3 minutes, allowing the sauce to evenly coat the cabbage and slightly reduce.
Remove from heat. Taste and adjust seasoning if needed. Plate immediately while hot.
Garnish with sliced scallions and toasted sesame seeds before serving.
Notes
For a spicy twist, add 1/4 teaspoon of chili flakes along with the garlic and ginger.
Red cabbage may be substituted, though the flavor profile will be slightly sweeter and milder.
