Instructions
Make the Batter:
In a large bowl, whisk together the water, lemon juice, and 1 tablespoon olive oil.
In a separate bowl, combine the chickpea flour, nutritional yeast, turmeric, baking powder, sea salt, kala namak (optional), and black pepper.
Gradually sprinkle the dry mix into the wet while whisking. Whisk just until smooth—avoid overworking to keep the omelette tender. Rest the batter for 5 minutes to hydrate.
Sensory Cue: The batter should be pourable like pancake batter, forming a ribbon off the whisk. If too thick, whisk in 1–2 teaspoons more water.
Fold in Vegetables:
Stir in the onion, red bell pepper, jalapeño (if using), zucchini, cilantro, and chives. Mix gently to distribute evenly.
Tip: If your zucchini is very moist, grate it and squeeze in a clean towel; excess moisture can prevent browning.
Cook the First Omelette (6 minutes):
Preheat an 8–10 inch nonstick or cast-iron skillet over medium heat. Add 1–1 1/2 teaspoons avocado oil and swirl.
Ladle in half the batter. Immediately tilt or use the ladle bottom to nudge it into an even 8-inch round, about 1/4 inch thick.
Cover with a lid and cook for 4 minutes, until the edges look dry and the top loses its glossy sheen. The underside should show light golden-brown spots.
Slide a flexible spatula around the edges to release, then flip in one confident motion. Cook uncovered for 2 minutes more until the underside is golden with some deeper toasted freckles.
Heat Cue: If the omelette browns too fast, reduce to medium-low. If it looks pale after 4 minutes, nudge heat slightly up. Target surface is around 350°F (175°C).
Cook the Second Omelette (6 minutes):
Transfer the first omelette to a baking sheet and keep warm in a 200°F (95°C) oven. Repeat with the remaining oil and batter.
Serve:
Fold each omelette gently in half. Top with yogurt, nestle in avocado slices, scatter microgreens or extra herbs, and finish with a squeeze of lemon and a few cracks of black pepper.
