Blended ripe avocado forms the base of this rich, dairy-free chocolate mousse, giving it a smooth, creamy consistency without any cream or butter. Cocoa powder and a touch of maple syrup round out the flavor. It comes together in about 10 minutes and chills in roughly 30.

Instructions
Peel and pit the ripe avocados. Place them into a blender or food processor.
Add the cocoa powder, maple syrup, non-dairy milk, vanilla extract, and a pinch of salt. Blend on high until smooth and creamy, scraping down the sides to ensure even blending.
Taste the mixture. Adjust sweetness or cocoa intensity by adding more maple syrup or cocoa powder if desired.
Transfer the mousse into a mixing bowl or individual cups. Cover and refrigerate for at least 1 hour to allow the flavors to develop and the mousse to firm.
Optional Step: For an ultra-silky texture, pass the mousse through a fine mesh sieve before chilling.
Notes
Michelle’s Tips:
Use agave or date syrup instead of maple syrup for a different flavor.
Top with fresh berries or chopped nuts for extra texture.
For an intense chocolate kick, add 1 teaspoon of melted vegan dark chocolate.
