Crisp the Chickpeas (10 minutes): Heat 1 1/2 tbsp olive oil in a 12-inch skillet over medium-high heat. If your cooktop has a temperature gauge, you’re aiming for a hot pan that sizzles on contact (approximately 375°F / 190°C surface temperature). Add chickpeas, cumin, smoked paprika, 1/2 tsp salt, and black pepper. Sauté, shaking the pan occasionally, for 10 minutes until the chickpeas are deeply golden and slightly blistered. Listen for a gentle crackle and look for a matte, toasted sheen.
Bloom the Garlic (1 minute): Push the chickpeas to one side to create a small pool of oil. Add the minced garlic to the oil and cook 45–60 seconds until fragrant and just turning pale gold—avoid browning to prevent bitterness. Toss to coat the chickpeas evenly.
Toss with Dressing and Herbs (1–2 minutes off heat): Remove the skillet from heat. Pour in the cilantro-lime dressing and toss immediately so the citrus stays bright. Fold in chopped cilantro, sliced scallions, and jalapeño (if using). Taste and adjust with a pinch more salt or a squeeze of lime as needed.
Finish and Serve: Spoon into bowls and top with diced avocado and toasted pepitas. Serve as-is, or over warm rice or tucked into tortillas for a hearty main. Total active cooking time: about 12 minutes.
