Instructions
In a small skillet over medium heat (350°F / 175°C), melt the coconut oil. Add the diced apple and a pinch of cinnamon. Sauté for 5–7 minutes until the apples soften and begin to caramelize. Stir occasionally for even browning.
In a medium saucepan, bring the almond milk to a gentle simmer over medium heat (about 3 minutes). Stir in the rolled oats, flaxseed, ground cinnamon, sea salt, and half of the maple syrup. Reduce heat to low and cook uncovered for 10–12 minutes, stirring regularly until thick and creamy.
Once the oats have thickened, remove the pan from heat. Stir in vanilla extract and remaining maple syrup. Fold in half of the sautéed apples, reserving the other half for topping.
Spoon the oatmeal into warm bowls. Top with the remaining caramelized apples and a sprinkle of chopped walnuts if using.
Notes
For extra creaminess, stir in a tablespoon of almond butter before serving.
Add a splash of plant milk if the oatmeal gets too thick after cooking.
