Start the Grits: In a heavy-bottomed saucepan, bring 4 cups broth to a boil over medium-high heat. Rain in the grits while whisking to prevent clumping. Reduce to low, cover partially, and cook at a gentle simmer; whisk every 3–5 minutes until beginning to thicken, about 15 minutes. Look for a soft, porridge-like consistency.
Enrich and Simmer to Creamy (8–10 minutes): Whisk in the plant milk in two additions. Continue to simmer on low, stirring frequently, until the grits are plush and creamy and the grains are tender, 8–10 minutes more (total cook on grits about 23–25 minutes). When you drag the whisk through, it should leave a faint trail that slowly fills.
Finish and Hold Warm: Off the heat, stir in vegan butter, nutritional yeast, salt, black pepper, and garlic powder (if using). Taste and adjust seasoning. Cover and keep warm on the lowest heat or over a warm burner; add a splash of milk if it thickens too much.
Season the Tofu: Cut pressed tofu into 3/4-inch cubes. In a bowl, combine tamari, maple syrup, Cajun seasoning, smoked paprika, and cayenne. Add tofu and gently toss to coat. Turn and cook another 3–4 minutes, repeating on remaining sides as needed until crisped and fragrant. Reduce heat if spices threaten to scorch.
Optional Oven-Crisp Method: For hands-off crisping, after seasoning and tossing with cornstarch, spread tofu on a parchment-lined sheet pan, drizzle or mist with oil, and bake at 425°F (220°C) for 20–25 minutes, flipping once at 12 minutes, until browned and crisp at the edges.
Brighten: Toss the hot tofu with lemon zest and a tiny squeeze of lemon juice for lift. Keep warm.
Plate: Spoon a generous bed of creamy grits into warm bowls. Mound the Cajun tofu on top. Finish with scallions, parsley, and a few dashes of hot sauce. Serve with lemon wedges alongside.
