Inspired by Vietnam’s beloved gỏi cuốn, these vibrant tofu rice paper rolls celebrate balance: fresh herbs, cool veggies, silky avocado, springy vermicelli, and golden‑seared tofu. I’ve paired them with a bright, nuoc cham–style peanut dip that’s tangy, salty, sweet, and just a touch spicy—built on lime, tamari, and roasted peanuts. Press and Marinate the Tofu (15 minutes): Wrap the tofu in paper towels or a clean kitchen towel and press under a heavy pan or tofu press for 15 minutes to expel excess moisture—this ensures better browning and a meaty bite. Slice into 1/2-inch batons. In a bowl, whisk tamari, lime juice, maple syrup, sesame oil, ginger, and garlic. Add tofu, toss gently, and marinate for 10–15 minutes while you prep vegetables. Sprinkle with cornstarch and toss to lightly coat just before cooking for extra crisping.
Sear the Tofu (8–10 minutes): Heat a 12-inch skillet over medium-high heat (aim for a hot surface; about 375°F/190°C if using an IR thermometer). Add neutral oil; when it shimmers, lay in tofu pieces without crowding. Sear until deep golden and lightly crisp, 3–4 minutes per side. You should hear a gentle sizzle and smell nutty, savory aromas. Transfer to a plate to cool slightly.Alternative: Air-fry at 390°F (200°C) for 10–12 minutes, shaking halfway; or oven-bake at 400°F (205°C) for 20–25 minutes, flipping once (note: these alternatives may change total cook time).
Cook the Vermicelli (5 minutes): Bring 8 cups water to a rolling boil. Add noodles and cook 2–3 minutes until just tender and springy. Drain and immediately rinse under cold water until cool; drain well. Toss with a few drops of sesame oil if you like to prevent sticking.
Prep the Vegetables and Herbs (10 minutes, concurrent with steps 1–3): Julienne cucumber and carrot into matchsticks; shred lettuce; slice avocado. Pick mint and cilantro leaves. Keep everything crisp under a damp towel.
Make the Dipping Sauce (5 minutes): In a small bowl, whisk peanut butter with warm water until smooth. Add lime juice, tamari, maple syrup, rice vinegar, garlic, and chili-garlic sauce. Whisk until glossy; thin with a splash more warm water if needed to achieve a dippable consistency. Stir in vegan fish sauce or a pinch of finely minced nori if using. Add mint and cilantro. Sprinkle sesame seeds. Fold the sides inward to enclose the ends, then roll away from you tightly like a burrito. The wrapper should look glassy and feel elastic; if it tears, you likely over-soaked—use less time on the next wrapper. Repeat with remaining wrappers.
Serve: Arrange rolls on a platter, seam-side down, with the peanut dipping sauce in small bowls. Garnish with extra herbs, sesame seeds, crushed peanuts, and lime wedges.
