Sweet potato wedges are tossed in oil and spices, then baked at high heat until the edges caramelize and the outsides crisp up — about 30 minutes total. Cutting the wedges thin and spreading them in a single layer are the two steps that make the biggest difference in texture. These work as a side dish or a snack with your favorite dipping sauce.
Begin by preheating your oven to 220°C (425°F). Line a large baking sheet with parchment paper to ensure the fries do not stick.
Peel the sweet potatoes, then cut them into uniform strips, about 1/4 inch thick. Uniform strips will ensure even cooking.
Place the sweet potatoes in a large bowl. Add olive oil, smoked paprika, garlic powder, sea salt, and black pepper. Toss until the potatoes are well-coated with the seasoning mixture.
Arrange the seasoned fries in a single layer on the prepared baking sheet. Make sure not to overcrowd the pan as this will cause them to steam rather than bake.
Bake in the preheated oven for 20 minutes, then flip the fries and bake for an additional 10 minutes or until they are golden brown and crispy on the edges.
Notes
For extra crispiness, pat the sweet potatoes dry before seasoning.
If you prefer a bit of heat, add a pinch of cayenne pepper to the seasoning mix.
