Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a large mixing bowl, combine the mushrooms with the olive oil, minced garlic, thyme, sea salt, and black pepper. Toss gently with your hands or a spoon to evenly coat.
Spread the seasoned mushrooms in a single layer on the prepared baking sheet. Avoid crowding to ensure proper roasting rather than steaming.
Roast for 25–30 minutes, stirring halfway through, until the mushrooms are golden brown, tender, and aromatic with beautifully caramelized edges.
Once out of the oven, immediately drizzle with lemon juice and sprinkle with chopped parsley to add freshness and color. Serve warm.
