Prep Aromatics and Vegetables (8–10 minutes): Julienne the ginger and thinly slice the garlic. Separate scallion whites and greens. Cut broccoli into bite-size florets, slice bell pepper, and trim snap peas. Keep everything in separate piles for quick, sequential cooking.
Cube and Coat the Tofu (2 minutes): Unwrap tofu and cut into 3/4-inch cubes. Toss gently with cornstarch, salt, and black pepper until evenly coated. The surface should look matte and just barely dusty—not clumpy.
Preheat the Wok (2 minutes): Set a carbon-steel wok or heavy skillet over medium-high heat until lightly smoking; the surface should read about 425°F (220°C) if using an infrared thermometer. Add the neutral oil; it should shimmer immediately.
Crisp the Tofu (7–9 minutes): Add tofu in a single layer. Let it sear undisturbed 3–4 minutes until golden, then flip and cook another 3–5 minutes until all sides are crisp. Transfer tofu to a plate.Sound Cue: You should hear a lively sizzle; if it quiets dramatically, increase the heat slightly.
Stir-Fry Aromatics and Vegetables (3–4 minutes): If the pan looks dry, add 1 teaspoon more oil. Add ginger and garlic; stir vigorously for 10–15 seconds until fragrant (avoid browning). Add scallion whites, broccoli, bell pepper, and snap peas. Toss rapidly 2–3 minutes until vegetables turn vibrant and tender-crisp. Deglaze with Shaoxing wine (optional), scraping up any browned bits for extra flavor.
