Herbed Bulgur Wheat Salad with Citrus–Sumac Dressing

Bulgur wheat forms the base of this hearty salad, paired with crisp cucumber, juicy tomatoes, toasted pistachios, and a generous handful of fresh herbs. A citrus-sumac dressing sharpened with a little pomegranate molasses ties everything together. It's ready in roughly 25 minutes and holds up well for packed lunches.
Hydrate the Bulgur: Place 1 cup bulgur in a heatproof bowl. Pour in 1 1/4 cups boiling water (100°C / 212°F), add a small pinch of salt, stir, then cover with a lid or plate. Let stand for 20 minutes until tender but pleasantly chewy. If any liquid remains, drain through a fine-mesh strainer and return to the bowl.
Plump the Currants: In a small bowl, cover 1/4 cup dried currants with 2 tablespoons boiling water (100°C / 212°F). Soak 10 minutes, then drain well and pat dry. This keeps them plump without watering down the dressing.
Toast the Pistachios: Warm a dry skillet over medium heat and toast 1/3 cup pistachios for 3–5 minutes, stirring, until glossy and fragrant with light golden edges. Cool, then roughly chop. Oven alternative: Toast on a sheet pan at 325°F / 165°C for 8–10 minutes, shaking once.
Make the Citrus–Sumac Dressing: In a small bowl, whisk together 3 tablespoons olive oil, 2 tablespoons lemon juice, 1 teaspoon lemon zest, 1 tablespoon red wine vinegar, 1 teaspoon pomegranate molasses (optional), 3/4 teaspoon fine sea salt, 1/2 teaspoon ground cumin, 1 teaspoon sumac, 1/4 teaspoon Aleppo pepper, and 1/4 teaspoon black pepper. No whisk? Combine in a jar and shake vigorously 20–30 seconds until emulsified.
Prep the Vegetables and Herbs: Dice 1 cup Persian cucumber and 1 cup tomatoes. Thinly slice 1/2 cup scallions. Finely chop 1/2 cup parsley and 1/4 cup mint (lightly packed). Aim for small, even cuts—this creates a cohesive, scoopable salad.
Fluff and Season the Bulgur: Uncover and fluff grains with a fork to separate. While still slightly warm, fold in half the dressing; warmth helps the bulgur absorb flavor. Taste and adjust salt as needed.
Assemble: Add cucumber, tomatoes, scallions, parsley, mint, 1 cup chickpeas, drained currants, and chopped pistachios to the bulgur. Pour over the remaining dressing and toss gently from the bottom up until everything glistens and herbs are evenly distributed. Adjust with extra lemon juice or a pinch of salt to brighten.
Rest and Finish: Let the salad stand 5–10 minutes (or chill briefly) so flavors marry. Drizzle with 1 tablespoon olive oil, sprinkle a pinch of flaky sea salt, and serve with lemon wedges. For a quick chill: Refrigerate 10–15 minutes at about 4°C / 39°F.
