Layered Vegan Moussaka with Lentil–Mushroom Ragù and Cashew Béchamel

Prepare and Season the Vegetables: Preheat the oven to 425°F (220°C). Line two rimmed sheet pans with parchment. Slice 2 large globe eggplants lengthwise into 1/2-inch planks. Arrange in a colander or on a rack, sprinkle evenly with 1 1/2 tsp kosher salt, and let stand for 25 minutes to draw out moisture and mellow any bitterness. Add minced garlic and 2 tbsp tomato paste; cook 1–2 minutes, stirring, until the paste darkens brick-red. Deglaze with 1/2 cup dry red wine (optional), scraping up browned bits; reduce by half, about 2 minutes. Add 3/4 cup lentils, 1 1/2 cups crushed tomatoes, 2 cups warm vegetable broth, 1 tbsp tamari, 1/2 tsp cinnamon, 1/4 tsp allspice, 1/8 tsp nutmeg, 1 bay leaf, 1 tsp salt, and 1/2 tsp pepper. Bring to a lively simmer, then reduce heat to maintain a gentle bubble. Simmer, uncovered, for 25 minutes, stirring occasionally, until lentils are tender and the sauce is thick and spoonable. Remove bay leaf and stir in 2 tbsp chopped parsley. Taste and adjust salt.
Make the Cashew Béchamel: Blend the drained cashews with 2 cups warm unsweetened plant milk, 3 tbsp nutritional yeast, and 1 tbsp lemon juice until completely silky, 45–60 seconds. If you don’t have a high-speed blender, blend longer or use an immersion blender; strain if needed for ultra-smoothness. In a medium saucepan over medium heat, melt 2 tbsp vegan butter (or warm EVOO). Whisk in 3 tbsp flour to form a roux; cook 2–3 minutes until it smells toasty but not browned. Gradually whisk in the cashew milk, a splash at a time at first to avoid lumps. Bring to a gentle simmer and cook, whisking, 5–6 minutes until glossy and thick enough to coat the back of a spoon (nappe). Season with 1 tsp salt, 1/8 tsp nutmeg, and 1/4 tsp white pepper. Total active time: about 8 minutes.
Assemble the Moussaka: Reduce oven temperature to 375°F (190°C). Lightly oil a 9×13-inch (3 qt) baking dish. Toss 1/3 cup panko with 1 tbsp EVOO and 1/4 tsp smoked paprika (optional). Sprinkle half the crumbs over the bottom of the dish for a crisp base. Layer ingredients in this order: potatoes (slight overlap), half of the ragù (spread to corners), all the eggplant in a shingled layer, remaining ragù. Pour the béchamel over the top and smooth. Tap the dish firmly on the counter to settle layers and release air pockets. Swirl the surface with the back of a spoon for texture; sprinkle remaining crumbs. Assembly time: about 8 minutes.
Bake and Rest: Bake at 375°F (190°C) for 30 minutes until the edges bubble and the top is lightly speckled and golden. Optional: broil 1–2 minutes for extra color—watch closely. Let rest 15 minutes before slicing so the layers set cleanly. The aroma should be warm with cinnamon and roasted eggplant, and the top should jiggle slightly but hold its shape when cut.
