Chickpeas are tossed in lemon juice, tahini, and warm spices, then roasted until crunchy in this simple, protein-rich recipe. The lemon brightens the nutty sesame coating, making these useful as a standalone snack or scattered over salads and grain bowls. Roasting takes about 35 minutes at high heat.

For the Tahini Sauce:

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a large mixing bowl, toss the chickpeas with olive oil, sea salt, cumin, and garlic powder until evenly coated.
Spread the chickpeas out in a single layer on the prepared baking sheet. Roast in the oven for 30–35 minutes, shaking the pan halfway through, until golden brown and crisp. They should feel crunchy on the outside with a slightly creamy core.
While the chickpeas are roasting, whisk together the tahini, lemon juice, maple syrup, and a teaspoon of water in a small bowl until smooth and pourable. Add more water a few drops at a time if needed for the right drizzle consistency.
Once the chickpeas are done roasting, let them cool for 5 minutes, then drizzle lightly with the lemon tahini sauce before serving, or serve the sauce on the side for dipping.
Notes
For extra crispiness, allow the chickpeas to roast a few extra minutes, watching closely to avoid burning.
If using canned chickpeas, be sure to dry them thoroughly; moisture is the enemy of crunch.
Add a pinch of smoked paprika or chili flakes for a spicy twist.
