Matcha Overnight Oats combine rolled oats, chia seeds, and oat or almond milk with earthy matcha powder and a little maple syrup, then rest in the fridge overnight. By morning the oats are thick and ready to eat straight from the jar — no cooking needed. The matcha adds a mild, grassy flavor along with a natural caffeine boost.
In a medium mixing bowl, whisk together the almond milk, matcha powder, maple syrup, vanilla extract, and a pinch of sea salt. Whisk vigorously until the matcha is fully dissolved and the mixture is creamy green with no lumps.
Add the rolled oats and chia seeds. Stir thoroughly until completely combined and the chia seeds are evenly dispersed.
Transfer the mixture into two clean mason jars or sealable containers. Tap gently to settle and eliminate air bubbles.
Cover and refrigerate for a minimum of 8 hours, or overnight, to allow the oats and chia seeds to fully absorb the liquid and soften.
In the morning, stir the oats and top with fresh strawberries, toasted coconut flakes, and hemp seeds. Serve chilled or let sit at room temperature for 10–15 minutes to take the chill off.
Notes
For a thicker texture, reduce almond milk by 1/4 cup.
If you prefer it sweeter, stir in extra maple syrup before serving.
