Instructions
Rinse and gently pat dry all berries. Remove any stems or hulls from strawberries before blending.
In a blender or food processor, combine the berries, water, organic cane sugar, fresh lemon juice, and salt. Blend until the mixture is smooth, with no visible lumps.
(Optional) Strain the pureed mixture through a fine-mesh sieve to remove seeds for a smoother texture. If you don’t mind the seeds, you can skip this step.
If you have an ice cream maker, pour the sorbet mixture into the chilled canister and churn according to the manufacturer’s instructions (approximately 20–25 minutes). If not, transfer the mixture to a freezer-safe container and freeze for about 2 hours (120 minutes), stirring every 30 minutes to break up ice crystals.
When the sorbet is firm but still scoopable, it’s ready to serve. If it’s too hard, let it sit at room temperature for a few minutes before scooping.
Notes
For a sweeter or tangier taste, adjust sugar or lemon juice accordingly.
You can substitute berries with other fruits like peaches or mango.
