These no-bake bars blend Medjool dates and shredded coconut into a chewy, naturally sweet snack that comes together in about 15 minutes with no oven required. Dates provide a caramel-like sweetness while toasted coconut adds depth and a satisfying chew. They work equally well as an everyday energy snack or a simple dessert.

Instructions
Line an 8x8-inch square pan with parchment paper, leaving some overhang on the sides for easy removal later.
In a food processor, pulse the almonds until finely chopped but not powdery — aim for a coarse meal texture to add a nice crunch.
Add the pitted dates, 1 cup shredded coconut, coconut oil, vanilla extract, and sea salt to the food processor. Blend until the mixture becomes sticky and well combined, scraping down sides as needed.
Transfer the mixture to the prepared pan. Using clean hands or a spatula, press the mixture firmly and evenly into the pan. Compacting the mixture tightly ensures the bars will hold together well.
Sprinkle additional shredded coconut on top and gently press it down to adhere.
Refrigerate the bars for at least 1 hour to firm up (even better if left overnight).
Once firm, lift out of the pan using the parchment overhang. Cut into 12 bars or squares using a sharp knife.
Notes
If your dates feel a little dry, soak them in warm water for 10 minutes, then drain well before using.
Switch it up by adding cacao nibs, hemp seeds, or swapping almonds for cashews or walnuts.
For an extra energy boost, sprinkle a touch of cinnamon or maca powder into the mixture before blending.
