Made with just raspberries, maple syrup, and chia seeds, this jam skips the long stovetop cook and the refined sugar of traditional recipes. Chia seeds absorb the fruit liquid as the mixture chills, thickening it naturally in about two hours. Spread it on toast, stir it into oatmeal, or spoon it over plant-based yogurt.

Instructions
In a medium saucepan over medium heat (about 350°F / 175°C), add the fresh or thawed raspberries. Cook while gently mashing with the back of a spoon until the berries break down and release their juices, about 5 minutes.
Stir in the maple syrup and lemon juice. Simmer for 2 more minutes, stirring occasionally until the mixture begins to slightly thicken and becomes fragrant and jammy.
Remove the saucepan from heat and stir in the chia seeds and optional vanilla extract. Let the mixture sit for at least 5 minutes off the heat to allow the chia seeds to swell and thicken the jam further.
Once the jam is thickened to your liking, transfer it to a sterilized glass jar. Allow it to cool to room temperature before sealing with a lid and refrigerating. The jam will continue to firm as it chills.
Notes
For a smoother texture, pulse the jam briefly in a blender once cooled. Be careful not to over-process—some texture is part of its charm.
Add a pinch of sea salt to enhance the berry flavor even more.
This jam keeps in the refrigerator for up to 7 days or freeze for up to 2 months.
