Canned chickpeas are drained, dried, and roasted at high heat until crunchy, then tossed with smoked paprika, cumin, cayenne, and a pinch of salt. They work equally well as a standalone snack, a salad topper, or a crunchy addition to grain bowls. Active prep is minimal, with about 35 minutes of oven time.

Instructions
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or a silicone mat.
Drain and rinse the chickpeas thoroughly. Pat them dry with a clean kitchen towel or paper towels. The drier they are, the crispier they will roast.
Transfer the chickpeas to a large mixing bowl. Add olive oil and toss until they're evenly coated.
In a small bowl, mix smoked paprika, cumin, cayenne pepper, sea salt, and black pepper. Sprinkle the spice blend over the chickpeas and toss well to evenly distribute the spices.
Spread the seasoned chickpeas evenly in a single layer on the prepared baking sheet. Roast in the preheated oven for 35 minutes, shaking the pan halfway through to ensure even crisping.
The chickpeas are done when golden-brown, crisp to the touch, and slightly popping. Let cool for 5–10 minutes—they’ll crisp up even more as they cool.
Notes
For added tang, toss the roasted chickpeas with a teaspoon of fresh lemon zest after baking.
To intensify the heat, increase the cayenne to 3/4 teaspoon or add a pinch of chili flakes.
If using dried chickpeas, soak 1/2 cup overnight, cook until tender, and fully dry before roasting.
Store leftovers in an airtight container at room temperature for up to 3 days.
