Press the Tofu (10–15 minutes): Wrap the 14 ounces of extra-firm tofu in paper towels and place a flat plate and a light weight on top to press out moisture. Drier tofu browns better and absorbs more marinade. Meanwhile, prep your marinade.
Make the Tikka Marinade (5 minutes): In a large bowl, whisk together 3/4 cup coconut or vegan Greek-style yogurt, 2 tablespoons lemon juice, 1 tablespoon neutral oil, 1 1/2 tablespoons ginger–garlic paste, 1 tablespoon tomato paste, 2 teaspoons Kashmiri chili, 1 1/2 teaspoons each cumin and coriander, 1 teaspoon garam masala, 1/2 teaspoon turmeric, 1/2 teaspoon smoked paprika (optional), 1 1/2 teaspoons maple syrup, and 1 1/4 teaspoons kosher salt until smooth and sunset-red. Reserve 2 tablespoons of this marinade in a clean small bowl for basting later (keep it separate so it stays food-safe).
Cut and Marinate (30 minutes): Pat the pressed tofu dry and cut into 1-inch cubes. Cut the red onion into petals and the bell peppers into 1 to 1 1/4-inch squares; leave cherry tomatoes whole if using. Add tofu and vegetables to the marinade and gently fold to coat evenly. Cover and marinate in the refrigerator for 30 minutes (or up to 24 hours for deeper flavor).
Thread the Skewers (5–10 minutes): Thread marinated tofu, peppers, onions, and tomatoes alternately onto soaked skewers, ending with a pepper or onion to secure. Don’t pack too tightly—space promotes even browning.
Preheat your Cooker: For a grill pan or outdoor grill, preheat to medium-high and aim for about 425°F (220°C). Oil the grates lightly.For Oven/Broiler: Position a rack 6 inches below the broiler and preheat the broiler to High, or preheat the oven to 475°F (245°C). Set a wire rack over a sheet pan for best airflow and char.
Cook the Skewers (12–16 minutes): Brush the grill or pan with 1 tablespoon neutral oil. Cook skewers, turning every 3–4 minutes, until edges are lightly charred and the marinade has set and caramelized—about 12–16 minutes total. In the final minute, brush with the reserved clean marinade for a glossy, tangy finish. Oven/Broiler Option: Arrange on the rack-lined sheet and broil 10–14 minutes, turning halfway, until char-spotted; or bake at 475°F (245°C) for 14–16 minutes, then broil 1–2 minutes to char.
Finish and Rest (2 minutes): Transfer hot skewers to a platter. Brush with 1 teaspoon vegan ghee (optional), dust lightly with chaat masala, and rest for 2 minutes to let juices settle.
Serve: Shower with chopped cilantro and squeeze fresh lemon over the top. The tofu should be bronzed with speckles of char, vegetables tender-crisp, and the aroma warm and citrusy.
