A filling of lentils, mushrooms, and vegetables is simmered into a thick, umami-rich gravy, then topped with a layer of mashed Yukon Gold potatoes and baked until golden. Both layers are completely dairy-free — olive oil and plant-based milk stand in for butter and cream in the mash. Instructions

Start the Potatoes (15 minutes simmering): Add potatoes to a 4-quart pot and cover with cold water by 1 inch. Season the water with 1 tbsp kosher salt. Bring to a boil over high heat, then reduce to a lively simmer and cook until the potatoes are completely tender when pierced, about 15 minutes. Tip: A fork should slip in and out without resistance.
Cook the Filling while Potatoes Simmer (20 minutes total): In a 12-inch skillet over medium-high heat, warm 2 tbsp olive oil. Add onion and cook until translucent and slightly golden at the edges, 3–4 minutes. Stir in carrots and celery; cook until softened, 4–5 minutes. Add mushrooms and cook, stirring occasionally, until their liquid evaporates and they take on a deep brown color, 6–7 minutes. Reduce heat to medium, add garlic, and cook just until fragrant, 30–45 seconds.Push vegetables to the edges, add tomato paste to the center, and cook it like you would a roux—pressing it into the pan to caramelize—about 2 minutes. Sprinkle flour over the vegetables and stir to coat; cook 1 minute to eliminate raw flour taste. Deglaze with red wine, scraping up browned bits, and let it reduce by half, about 2 minutes. Pour in vegetable broth, then add tamari, vegan Worcestershire, thyme, rosemary, smoked paprika, black pepper, and 1 tsp kosher salt. Stir in the lentils and simmer, stirring occasionally, until glossy and thickened like a spoon-coating gravy, 5–6 minutes. Fold in peas (and corn, if using) and heat 1–2 minutes. Taste and adjust seasoning.
Drain and Mash the Potatoes (5 minutes): Drain potatoes well and return them to the hot pot. Let steam off excess moisture for 1 minute. Warm the plant milk with vegan butter until the butter melts (microwave or small pan), then add to the potatoes with 1 tbsp olive oil, nutritional yeast, white pepper, and a pinch of salt. Mash until smooth and fluffy—avoid overworking to keep them light. Fold in chives.
Assemble (3 minutes): Spread the lentil-mushroom filling evenly in the prepared baking dish. Dollop the mashed potatoes over the top, then gently spread to the edges to seal. Use a fork to create ridges—all those peaks will crisp beautifully. Brush the surface lightly with 1 tbsp olive oil.
Bake (22 minutes + optional 2-minute broil): Bake at 400°F (200°C) until the filling is bubbling at the edges and the top is lightly golden, 20–22 minutes. For deeper color, broil on high for 1–2 minutes (500°F/260°C), watching closely.
Rest and Serve: Let the shepherd's pie rest 10 minutes to set. Finish with a pinch of flaky sea salt and scatter with parsley. Serve hot.
