Crispy thin-crust pizza topped with smoky BBQ sauce, seared spiced tofu, and fresh vegetables makes for a satisfying plant-based meal. A drizzle of cashew cream adds richness in place of dairy cheese. The whole pizza is ready in roughly 45 minutes, including prep.

For the Cashew Cream:
¾cupraw cashewssoaked in hot water for 20 minutes
½cupwater
1tbsplemon juicefreshly squeezed
1tspapple cider vinegar
½tspsaltor to taste
For the Pizza:
1roundpizza doughstore-bought or homemade, about 12-inch round
⅓cupvegan BBQ saucefor spreading on the base
½cupred onionthinly sliced
1cupcherry tomatoeshalved
¼cupfresh cilantroroughly chopped

Instructions
Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven while it preheats.
In a non-stick skillet over medium-high heat, warm the olive oil. Add tofu cubes and cook for 6–8 minutes, turning occasionally until all sides are golden brown.
Reduce heat to low, add 1/3 cup BBQ sauce, and toss to coat. Cook for an additional 2 minutes. Remove from heat and set aside.
Drain the soaked cashews and blend with water, lemon juice, apple cider vinegar, and salt until silky smooth. Set aside. This is your cashew cream.
Roll out the pizza dough on a lightly floured surface. Transfer it to a baking sheet or preheated pizza stone.
Spread 1/3 cup BBQ sauce over the dough. Layer with BBQ tofu, sliced red onions, and halved cherry tomatoes.
Bake for 12–15 minutes until the crust is crisp and golden brown, and toppings are caramelized.
Drizzle with cashew cream and sprinkle with chopped cilantro before serving.
Notes
Press tofu between paper towels and a heavy object for best texture.
Add smoked paprika or chipotle powder to tofu for added depth.
