Black beans and red lentils are seasoned together with cumin, smoked paprika, and garlic to build a hearty, protein-rich taco filling that cooks in about 25 minutes. Served in warm corn or flour tortillas and topped with fresh salsa, shredded cabbage, and lime, these tacos are straightforward to assemble for a casual weeknight dinner. The filling can be made ahead and reheated easily.
Heat the olive oil in a large skillet over medium heat. Add the chopped red onion, stirring occasionally until it begins to soften and become translucent, about 5 minutes.
Add the minced garlic, ground cumin, smoked paprika, and chili powder. Sauté for another 2 minutes until fragrant.
Stir in the black beans and lentils. Cook for 8–10 minutes, stirring often, until everything is heated through and well-coated with spices.
Warm the corn tortillas on a skillet for about 30 seconds on each side or until pliable.
Assemble the tacos by spooning the black bean and lentil mixture onto each tortilla. Top with salsa, avocado slices, and chopped cilantro. Serve immediately.
Notes
For added zest, consider squeezing fresh lime juice over the tacos just before serving. If you're gluten-free, ensure your corn tortillas are certified gluten-free. This filling can also be used in burritos or as a topping for rice bowls.
