Instructions
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
Slice the French bread in half lengthwise to create two open-faced halves. Place them cut-side up on the baking sheet.
Spread about 1/2 cup of marinara on each half of the bread, making sure to reach the edges for full flavor coverage.
If using the homemade cashew cheese: blend soaked cashews, plant milk, nutritional yeast, lemon juice, and salt until smooth and creamy. Spoon or dollop across the sauced bread.
Top each bread half with vegan mozzarella (or cashew cheese), then layer on the olives, red onion, and spinach.
Sprinkle the entire surface with dried oregano for a fragrant, savory boost.
Bake for 12–15 minutes, or until the cheese is melted and bubbling and the edges of the bread are golden brown and crispy.
