The cashew ricotta mimics the creamy texture of traditional dairy ricotta and takes about 15 minutes to blend together. Prepare the Cashew Ricotta: Drain the soaked cashews and blend them in a food processor with nutritional yeast, lemon juice, garlic, sea salt, and water. Blend until smooth, adjusting the water to reach a creamy ricotta-like texture.
Sauté the Vegetables: In a large skillet over medium heat, warm the olive oil. Add the spinach and zucchini, and sauté until the spinach wilts and the zucchini is tender, about 5-7 minutes. Season lightly with salt and pepper.
Assemble the Lasagna: Preheat your oven to 180°C (350°F). In a baking dish, spread a thin layer of marinara sauce. Layer the lasagna noodles, followed by half the cashew ricotta, half the sautéed vegetables, and more marinara. Repeat the layers, finishing with noodles and a final coating of sauce.
