This fully plant-based version recreates every classic layer using vegan ingredients, delivering the same crunchy, chewy, and chocolatey combination. The bars come together in about 40 minutes with minimal hands-on time.
1 ½cupsvegan graham cracker crumbsuse finely ground, such as Nairn's or make your own from vegan graham crackers
¼cupcoconut sugaror organic brown sugar for a deeper caramel note

For the Sweet Layer:

Instructions
Preheat your oven to 350°F (175°C). Line a 9x13-inch baking pan with parchment paper, allowing edges to hang over for easy lifting later.
Prepare the Crust: In a mixing bowl, combine graham cracker crumbs, coconut sugar, and melted coconut oil. Mix until the texture resembles wet sand. Press the mixture firmly and evenly into the bottom of the lined pan using your fingertips or a flat spatula.
Bake the crust for 8–10 minutes until lightly golden and fragrant. Remove from oven and let cool while preparing the filling.
Make the Sweet Layer: In a high-speed blender, combine soaked cashews, coconut milk, maple syrup, and coconut oil. Blend on high until completely smooth and creamy—about 1–2 minutes. Scrape down sides as needed.
Pour the cashew-coconut mixture evenly over the cooled crust. Gently tap the pan to remove air bubbles.
Add Toppings: Evenly sprinkle chocolate chips, shredded coconut, and chopped pecans over the surface. Lightly press them into the filling to adhere.
Bake in the preheated oven for 15–18 minutes, just until the top appears set and slightly golden around the edges. Remove and allow to cool completely in the pan, then refrigerate for at least 1 hour before slicing into bars.
