Instructions
Preheat your oven to 350°F (175°C). Line a standard 12-cup muffin tin with paper liners or lightly grease with oil.
In a large mixing bowl, whisk together the flour, pumpkin pie spice, baking powder, baking soda, and salt until evenly combined.
In a separate medium bowl, whisk together the pumpkin purée, brown sugar, plant milk, oil, and vanilla extract until smooth and cohesive.
Pour the wet mixture into the dry ingredients. Fold gently using a spatula or wooden spoon until just combined—do not overmix. The batter should be thick but scoopable.
Divide the batter evenly among the muffin cups, filling each about 3/4 of the way. For a professional look, use an ice cream scoop. Sprinkle the tops with raw cane sugar if using.
Bake in the preheated oven for 22–25 minutes or until a toothpick inserted into the center comes out clean and the tops spring back lightly to touch.
Allow muffins to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely. Enjoy warm or at room temperature.
Notes
For a nutty flavor, substitute 1/4 cup of flour with almond flour.
