Instructions
Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente, about 8–10 minutes. Reserve 1/4 cup of pasta water before draining. Drain and set aside.
While the pasta cooks, prepare the sauce: In a blender or food processor, combine avocados, olive oil, garlic, lemon juice, basil, plant milk, salt, and pepper. Blend until smooth and creamy. Add reserved pasta water 1 tablespoon at a time if a thinner consistency is desired.
Return drained pasta to the warm pot (off heat) and pour the avocado sauce over the pasta. Use tongs to toss gently until the noodles are evenly coated with sauce.
Taste for seasoning and adjust salt or lemon juice if needed. Divide into serving bowls. Garnish with nutritional yeast and hemp seeds or pine nuts for added flavor and texture.
Notes
Use ripe avocados for the smoothest sauce. Hass avocados are ideal for their rich flavor and creaminess.
