What makes this version work

Two things actually matter here. First, the chocolate has to be fully melted and smooth before you dip — any lumps mean uneven coating that cracks when it sets. A double boiler gives you control; direct heat moves too fast and scorches the chocolate. Second, the strawberries must be completely dry. Even a little surface moisture causes the chocolate to seize or slide off as it hardens. Pat them thoroughly and let them air-dry for a few minutes after washing. That’s it. A neutral refined oil like sunflower or canola does the same job — skip the garnish if you’re using a substitute oil, since the finish will be slightly less glossy and not worth the extra dish. For toppings, crushed salted crackers or roasted sunflower seeds are solid pantry standbys if you don’t have pistachios or pretzels.

Make-ahead notes

These are best eaten the day they’re made — the strawberry releases juice over time, which softens the chocolate from the inside. That said, you can make them up to 18 hours ahead. Store them in a single layer in an airtight container lined with parchment, and keep them in the fridge. Do not stack layers. Freezing is not recommended; the texture of the berry turns mushy when thawed and the chocolate coating weeps condensation.
