The Vegemite-avocado pairing is genuinely good — salty, umami, creamy, and bright all at once.

The technique that matters

Two things make or break this toastie. First, Vegemite application: spread it thin and all the way to the edges. It is far more concentrated than any other spread, and a thick stripe down the middle will overpower everything else. Scrape, don’t spread. Second, the pan temperature when you add the vegan butter matters more than most people expect.
