Hearty Sweet Potato Delight with Black Beans and Avocado

by Michelle Davis

This is a baked sweet potato loaded with spiced black beans and fresh avocado — a complete, filling meal that comes together with minimal prep and a handful of pantry staples. It’s naturally vegan and gluten-free without any substitutions. If you’re new to cooking plant-based, this is a genuinely good place to start.

Why this recipe works

Two things make this recipe reliable. First, roasting the sweet potato whole at high heat lets the natural sugars concentrate and caramelize at the skin, so the flesh turns soft and sweet without any added fat or fuss. Second, warming the canned black beans with cumin, smoked paprika, lime juice, salt, and pepper — rather than serving them cold straight from the can — takes about three minutes and makes a significant difference in flavor. The spices bloom in the heat, and the lime juice cuts through the earthiness of the beans so the whole topping tastes intentional, not like an afterthought.

Mistakes to avoid

  • Skipping the fork prick before roasting. Pierce the sweet potato several times before it goes in the oven. Without venting, steam builds up inside and the skin can split unevenly or, occasionally, burst. A few quick pokes with a fork takes two seconds.
  • Cutting the avocado too early. Slice or dice the avocado right before serving. Even fifteen minutes of sitting exposed to air will turn it brown and mushy. If you’re prepping ahead, keep the avocado whole and uncut until the moment you assemble.
  • Using underripe avocado. An underripe avocado is hard, pale, and bitter — it won’t work here. Squeeze the avocado gently in your palm; it should give slightly without feeling mushy. If yours is firm, leave it on the counter for a day or two, not in the fridge.
  • Overheating the beans. The black bean topping only needs two to three minutes over medium heat. Cooking them too long on high heat dries them out and makes them grainy. Pull them off the heat as soon as they’re hot and the spices smell fragrant.
  • Not salting until the end. Taste the bean mixture after it’s heated and seasoned, then adjust salt. Canned beans vary a lot in sodium content depending on the brand, so seasoning by feel at the end gives you a better result than following a fixed amount.

Ingredient notes

  • Smoked paprika: Regular paprika won’t give you the same result — the smoky note is doing real work in the bean seasoning. Smoked paprika is sold in most grocery stores near the other spices, often labeled “pimentón” or “smoked Spanish paprika.” It keeps well in a sealed jar for months.
  • Canned black beans: Fine here. Drain and rinse them first to wash off the starchy liquid, which can make the topping taste flat. Dried beans cooked from scratch work too, but there’s no meaningful flavor advantage for this recipe — skip the extra hour.
  • Pumpkin seeds (pepitas) as garnish: The recipe lists these as optional, and honestly, skip the garnish — not worth the extra dish. The sweet potato, beans, and avocado are already texturally complete.
  • Cilantro swap: If cilantro tastes like soap to you (a real genetic thing, not a preference), flat-leaf parsley works as a straight substitute. It won’t add the same brightness, but it won’t clash either.

A whole sweet potato bakes until soft, then is split and loaded with seasoned black beans, diced avocado, and fresh herbs for a filling meal that takes about an hour, most of it hands-off oven time. Smoked paprika and cumin season the beans, while a squeeze of lime brightens the finished dish. It works as a satisfying lunch or a light dinner.

Equipment

  • 1 Oven
  • 1 Chef's knife
  • 1 Cutting board
  • 1 Mixing bowl
  • 1 Small skillet
  • 1 Fork or potato masher

Ingredients

  • 2 medium sweet potatoes organic, scrubbed and pierced with a fork
  • 1 tablespoon extra virgin olive oil for roasting
  • 1 cup black beans cooked, drained and rinsed if using canned
  • 1 teaspoon ground cumin preferably toasted and freshly ground
  • 1 teaspoon smoked paprika adds depth and warmth
  • 1 tablespoon lime juice freshly squeezed
  • 1 large ripe avocado sliced or diced
  • 2 tablespoons fresh cilantro chopped
  • ¼ teaspoon sea salt to taste
  • teaspoon black pepper freshly ground, to taste
  • 1 tablespoon pumpkin seeds lightly toasted for garnish (optional)

Instructions

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Wash and dry the sweet potatoes. Pierce them a few times with a fork, place them on the baking sheet, and drizzle with olive oil. Roast for 40–45 minutes or until fork-tender and the skin is slightly crisp.
  • While the sweet potatoes bake, heat a small skillet over medium heat. Add the black beans, cumin, smoked paprika, lime juice, salt, and pepper. Sauté for 3–4 minutes until warmed through and fragrant. Set aside.
  • Once the sweet potatoes are done, slice them open down the center lengthwise. Using a fork, gently fluff the interior to create space for the toppings.
  • Top each sweet potato with the warm black bean mixture. Add sliced or diced avocado on top, followed by chopped fresh cilantro.
  • Finish with a sprinkle of toasted pumpkin seeds for crunch (optional). Serve immediately while warm.

Notes

Michelle’s Tips:

  • For an extra burst of flavor, add a quick pickled red onion or jalapeños on top.
  • Substitute black beans with pinto or kidney beans for variety.
  • You can prepare the roasted sweet potatoes a day ahead and reheat in the oven at 350°F (175°C) for 10–15 minutes before serving.

Your questions, answered

Can I make this ahead for meal prep?

Yes — roast the sweet potatoes up to three days ahead and store them whole in the fridge. Reheat them in the oven at 375°F for about ten minutes or microwave on high for two minutes, then add the freshly made bean topping and avocado just before eating. Don’t store assembled potatoes; the avocado won’t hold.

How do I know when the sweet potato is fully cooked?

Poke it with a knife or skewer — it should slide in with no resistance, like going through soft butter. If there’s any firmness in the center, give it another ten minutes. Size varies a lot, so use the texture test rather than the clock.

Can I use a different bean if I don’t have black beans?

Pinto beans are the closest swap and work very well with the same cumin and smoked paprika seasoning. Kidney beans or cannellini beans also work, though the flavor is a bit milder — you may want a small extra pinch of smoked paprika to compensate.
