This is a blended butternut squash soup made dairy-free with full-fat coconut milk. It takes about an hour, makes four generous bowls, and holds up well in the fridge — which is the real reason to make it on a Sunday.

Substitutions that actually work

  • Coconut milk: Full-fat is specified for a reason — it blends into a noticeably smoother, richer soup than light coconut milk. If you want to skip the coconut flavor entirely, blended soaked cashews (½ cup cashews to ¾ cup water) work well and taste more neutral.
  • Butternut squash: Kabocha or red kuri squash are solid swaps. Both are denser, so cut them slightly smaller and add 5 extra minutes of simmering time.
  • Vegetable broth: Low-sodium store-bought works fine. If yours is heavily salted, hold off on adding the recipe’s 1 tsp salt until after blending and tasting.
  • Nutmeg: If you only have pre-ground, use ¾ tsp — it’s more concentrated than freshly grated.

Instructions
