Two things actually move the needle here. First, pressing the tofu long enough — at least 20 minutes — isn’t optional if you want the marinade to absorb rather than sit on the surface. Wet tofu repels liquid; pressed tofu drinks it in. Second, the lemongrass gets blended with the other aromatics rather than left in chunks. That step extracts the oils and distributes the flavor evenly through every cube instead of concentrating it in a few fibrous bits. Those two steps are the difference between tofu that tastes seasoned all the way through and tofu that just tastes like the outside of itself.

Substitutions that actually work

  • Fresh lemongrass: This is the one ingredient worth tracking down — dried lemongrass won’t give you the same result. Most Asian grocery stores carry it fresh. In a pinch, lemongrass paste (from a tube) works reasonably well; use about 1 tablespoon per stalk called for.

  • Tofu came out soft instead of crispy: Either the tofu wasn’t pressed enough, or the pan was overcrowded. Cook in batches if needed — steaming is the enemy of a crust.

Storage and reheating

Leftovers keep well in an airtight container in the fridge for up to 4 days. The tofu will soften overnight as it sits in any residual sauce, but it reheats well in a dry skillet over medium heat for 3–4 minutes, which brings back most of the crust. A microwave works in a pinch but leaves it soft. For freezing, the cooked tofu freezes fine for up to 6 weeks — freeze it flat on a tray first, then transfer to a bag so the pieces don’t clump. Thaw in the fridge overnight and reheat in a skillet as above.

Instructions
 

  • Begin by pressing the tofu for at least 20 minutes to remove excess moisture. You can use a tofu press or wrap it in a clean towel with a heavy object on top.
  • In a blender or food processor, combine the chopped fresh lemongrass, garlic, ginger, maple syrup, soy sauce, lime juice, and 1 tablespoon of oil. Blend until as smooth as possible. You should smell a strong citrusy, herbal aroma.
  • Cube the pressed tofu into 1-inch squares and place them in a mixing bowl. Pour the marinade over the tofu. Toss gently to coat evenly. Marinate for at least 15 minutes, or up to 2 hours for deeper flavor.
  • Heat 2 tablespoons of oil in a non-stick skillet or wok over medium-high heat (about 375°F / 190°C). Once oil is shimmering, add the marinated tofu in a single layer.
